Mint Pineapple Cucumber Smoothie

Mint Pineapple Cucumber Smoothie 2 servings

 

Ingredients

  • 2 heaping cups (10 oz) pineapple, frozen or fresh
  • 1 heaping cup (7 oz) English cucumber, sliced or 3 mini Persian cukes
  • 1 cup (packed) fresh kale or baby spinach
  • 1 small sweet apple, cored and chopped
  • 10-15 mint leaves (and stems), depending on leaf size and preferred mintiness
  • 1 cup cold water
  • 4-6 ice cubes, if using fresh pineapple

 

Instructions

  1. Place all the ingredients in a high-powered blender and blend until smooth.
  2. Once blended, taste and adjust according to preferences such as adding more mint for a stronger mint flavour or pineapple and/or apple for additional sweetness.
  3. Best served immediately.

Blend all 3 items and enjoy!

1 Cup water
2 Tablespoons Chia Seeds
4-5 Frozen peach or pear slices
Half-cup or more frozen blueberries
5 frozen strawberries, or to taste
(Cherries are also delicious)
6 Bok Choy leaves, lightly steamed

The finished smoothie has no cabbage-y flavor that I can detect, but since taste buds are different, you may need to experiment a little to find a berry–to–bok choy ratio that works for you.

Serves 2

 

Ingredients:

8 1/2 ounces freshly squeezed orange juice, divided (half an ice cube tray)🍊

1/2 orange zest, finely grated

1/2 cup whole milk or vanilla coconut milk

2 Tbsp monkfruit powdered sugar

1/2 tsp vanilla extract

Whipped topping, optional

 

Pour 6 1/2 ounces of the orange juice into an ice tray & freeze until solid approx. 2 hours. Store the remaining 2 ounces of juice and the zest in an airtight container in the fridge until ready to use. In the blender, combine the frozen juice cubes, reserved orange juice, zest, milk, powdered sugar, & vanilla. Blend until smooth and slushy, 30-45 seconds. Top w whipped topping if desired. Serve immediately.
