Rainbow 🌈 Edamame Red Lentil Salad (Vegan if you omit feta)

 

INGREDIENTS

  • 1 1/2 to 2 cups shelled and cooked edamame (I boil for about 5 minutes in the micro)
  • 1 cup frozen or fresh corn (I used canned corn salsa I had on hand)
  • 1 cup cooked red lentils
  • 1/2 cup sliced English cucumbers
  • 1 red pepper, seeded and sliced (yellow or orange peppers may be substituted)
  • 1/2 bunch cilantro leaves with stems discarded, or to taste
  • heaping 1/2 cup crumbled feta, or more to taste
  • 1/4 cup diced red onion
  • 1 small/medium Hass avocado peeled, pitted, and diced, optional
  • 1/2 teaspoon salt, or to taste
  • 1/2 teaspoon black pepper, or to taste
  • generous pinch cayenne pepper (doesn’t make it spicy, makes it not bland)
  • 4 tablespoons lemon juice (2 lemons juiced)
  • 2 tablespoons olive oil

 

INSTRUCTIONS

  • To a large bowl, add all ingredients in the order listed, and toss very well to combine. Taste and adjust seasonings as necessary. Salad may be served immediately although the flavors marry, develop, and salad tastes even better the second day. Salad will keep airtight in fridge for up to 4 days.

Ingredients

  • 2 avocados diced
  • 1 english cucumber sliced
  • 1 red bell pepper diced
  • 1/4 cup red onion sliced or caramelized yellow onion cooled
  • 1 cup arugula/spinach
  • 2 Tablespoons olive oil
  • 2 Tablespoons lemon juice
  • salt and pepper
  • 1/4 cup feta cheese

 

Instructions

 

 

  • In a large bowl combine avocado, cucumber, red bell pepper, red onion and arugula. Gently toss.
  • In a small bowl whisk the olive oil, and lemon juice. Add to the veggies and toss.
  • Serve with crumbled feta cheese.

Quick and easy healthier pizza at home :) Takes 15 mins total from star to finish!!


Ingredients:

lavash (thin wrap bread)

chicken sausage or Pumfu for vegan

beet or pizza sauce

mozzarella cheese

fresh spinach

red bell peppers

black olives

olive oil spray

 

directions:

Preheat oven to 400 degrees. Place lavash sheets on sheet pan. Cook sausage. Top lavash with sauce, mozzarella, sausage, & veggies. Spray with olive oil spray and cook for 6 minutes in oven. Enjoy!

1 Tbsp Olive oil

2 sweet potatoes, riced or shredded

1 cup peas

bok choy, steamed 

egg whites

chicken

kimchi (cucumber, black radish, red bell pepper, & carrot all sliced thin)

3 Tbsp coconut vinegar

1 Tbsp brown or coconut sugar

INSTRUCTIONS:

Fry up the sweet potatoes in olive oil with peas. Once done put in serving bowl. Then start the bok choy in the same pan. Then fry the eggs in the same pan. Place it all in serving bowl w chicken. Salt and pepper everything to taste. Thin slice cucumber, radish, red bell pepper, & carrot. Add 3 Tbsp coconut vinegar and 1 Tbsp brown sugar. Add to serving bowl and enjoy.

Orange glazed salmon with Green Bean Stir Fry

 

Ingredients:

3 Tbsp olive oil

2 pc wild-caught salmon

1 pkg green beans

1 red bell pepper, cut into chunks

1 small onion, cut into chunks

1/2 cup pecan halves

1 orange, juiced

1/2 inch piece fresh ginger, chopped

1 large clove garlic, chopped

1/2 cup Coconut aminos

1/2 tsp Chinese 5 spice

Salt and pepper to taste

 

Heat olive oil over high heat in large frying pan. Add onions, bell pepper, garlic, ginger, and green beans. Add coconut aminos and cook until green beans are desired doneness. Move all these veggies to a large bowl. Add 1 Tbsp olive oil to hot pan and add salmon to the pan skin side up. Season the skin with salt and pepper. After 2-3 mins, turn fish over and cook the other side for 2-3 minutes. Season fish with Chinese 5 spice powder. Then squeeze orange juice all over the top of salmon in hot pan and add 1/2 cup pecan halves. Serve fish over veggies. Tastes delish! Enjoy!

I made my own version of Ensalata de Pollo (chicken salad) w last week’s bundle red bell peppers, corn, potato, green onion. It’s so good!!

The sauce is Greek yogurt or sour cream, chili powder, cumin, salt, pepper, garlic powder, zest and juice of lime.
