Fall is coming Brussels Sprouts Recipe

 

Ingredients

  • 12 oz Brussels sprouts ends trimmed, yellow leaves removed
  • 2 tablespoons olive oil
  • ¼ teaspoon salt
  • Fresh cracked pepper
  • 4 slices bacon cooked and chopped
  • 1 cup pecans
  • ½ cup dried cranberries
  • 2 Tbsp parmesan cheese, optional for top

 

Instructions 

How to Roast Brussels Sprouts

  • Preheat oven to 400 F. 
  • Slice all Brussels sprouts in half.
  • In a medium bowl, combine halved Brussels sprouts, 2 tablespoons of olive oil, salt, pepper and toss to combine.
  • Place Brussels sprouts on the baking sheet, cut side down. 
  • Roast in the oven at 400 F for about 25 minutes. During the last 5-10 minutes of roasting, turn them over for even browning, the cut sides should be partially charred but not blackened.

 

How to Cook Bacon in the Oven

  • Line the separate baking sheet with foil.  Add the bacon slices in one layer.  Bake in the preheated oven at 400 F for about 20 minutes or until the bacon is done.  You can do it at the same time as roasting the Brussels sprouts.
  • Drain bacon of fat and slice the bacon into small bites.

How to Toast Pecans

  • Line a baking sheet with parchment paper.  Add pecans in one layer.
  • Toast the pecans for about 5 minutes (maybe a bit longer) in the preheated oven at 350 F until they get darker in color.

Prepare Dried Cranberries

  • For best results, briefly soak the dried cranberries in hot water.   Bring a small pot of water to boil.  
  • Add dried cranberries to a medium bowl.  Pour hot water over the cranberries and soak them for about 10 minutes.  Drain.

Assembly

  • In a large bowl, combine roasted Brussels sprouts, warm chopped cooked bacon, toasted pecans, and soaked dried cranberries.   Toss everything together.  The olive oil from Brussels sprouts and fats from bacon should be enough to coat the ingredients.  If desired, add 1 tablespoon of olive oil to mix with the salad (optional). Top with parmesan cheese if desired.

Cake:
1 cup vegan butter 2 sticks
1 cup water
4 Tablespoons cocoa
2 cups monkfruit sugar
2 cups cassava flour (or 1 cup whole wheat and 1 cup unbleached white flour)
1/2 teaspoon salt
1 teaspoon baking soda
2 eggs beaten (I used duck)
1/2 cup unsweet coconut milk
1 teaspoon organic vanilla

Instructions:
Grease a 10x15x1 inch sheet cake pan and set aside. Note: you can use a smaller pan, and get a thicker cake… its delicious either way.
Pre-heat oven to 350 degrees.
Put butter, water and cocoa in a sauce pan and bring to a gentle boil.
Put the remaining dry ingredients into a bowl and stir to mix well.
Pour hot mixture into dry ingredients and stir well.
Add eggs, coconut milk, and vanilla and mix thoroughly.
Pour into a greased sheet cake pan (10 x 15 x 1 is a good size)
Bake 20-25 minutes or until test knife comes out clean.

While cake is cooking, make the icing as follows:
Icing:
1/2 cup vegan butter (1 stick)
1/4 cup cocoa
6 tablespoons coconut milk
2 cups organic powdered monkfruit sugar
1/2 teaspoon vanilla
Chopped Pecans
2 tsp cinnamon

Icing Instructions:
Melt butter with cocoa, whisking well as it melts.
Add coconut milk and continue stirring.
Add powdered sugar, and vanilla, & cinnamon.
Mix well.
Pour over cake as soon as it comes out of oven.
Allow to cool and serve (actually this is a wasted instruction… eat it hot if you like, it is so good any which way you serve it.

Crust:

1.5 cups pecans

2/3 cup coconut flakes

2 cups packed pitted dates

 

Mix in blender or food processor and put in pie pan, pressing down around edges.

 

Filling:

1 box vanilla pudding

1 container @spero original plant based cheese

1.5 cups vanilla plant based milk

4 Tbsp maple syrup

Topping: sliced ripe figs from @amarilloeatsorganic

 

Place filling on top of crust then decorate w figs and chill 2 hours to set mmm 😋

For the dressing:

1/3 cup avocado oil

2 tablespoons fresh lemon juice (about 1 small lemon)

For the slaw:

1/4 cup Green onions 

1 head green cabbage, thinly sliced

2 green or red apples, cored and sliced into matchsticks

1/2 cup fresh chopped cilantro

1/2 cup thinly sliced pecans or almonds
