Fall Pomegranate Kale Salad

Pomegranate Kale Salad

For the salad

  • 1 cup pomegranate seeds
  • 2 cups chopped baby kale
  • 2 cups cooked wild rice (you can use leftover rice or buy precooked)
  • 1/4 cup toasted walnuts
  • 1/4 cup feta cheese (omit for vegans)

For the dressing

  • 1/2 cup minced onion or shallot
  • 2 tablespoons olive oil
  • 2 tablespoons water
  • 2 tablespoons honey (sub agave for vegans)
  • 1/2 tablespoon apple cider vinegar
  • 1/2 teaspoon salt
  • 1 squeeze lemon or orange juice

INSTRUCTIONS

  • Prep the salad ingredients (chop, rinse, toast, etc). Chill the ingredients in the fridge while you’re making the dressing if you want a cold salad.
  • Mince the shallot or onion and saute in 1/2 tablespoons olive oil to reduce the bite. When soft and fragrant, remove from heat and transfer to a food processor. (If you want a stronger flavor for your dressing, skip the sauteing altogether. The shallot in particular works well for this.)
  • Pulse the onions or shallot with the remaining olive oil, water, honey, apple cider vinegar, salt, and orange juice until smooth and creamy. Taste and adjust. Add additional olive oil or water to keep the mixture moving through the food processor.
  • Toss the salad ingredients together with the dressing just before serving. I prefer to serve this at room temperature or chilled slightly.

INGREDIENTS
* 2 cups pecans (or nuts of choice)
* 2 cups cashews
* 2-4 cups plain oat granola
* 2 egg white
* 1 cup brown sugar
* 6 tsps pumpkin pie spice

INSTRUCTIONS
1. Preheat oven to 250F and spray a rimmed cookie sheet with nonstick cookie sheet.
2. In a medium bowl, whip egg white with a wire wisk until frothy. Add in brown sugar and pumpkin pie spice. Mix until combined. Add in pecans and stir to coat completely.
3. Pour pecans onto prepared pan and bake for 25-30 minutes. Remove from oven and pour onto waxed paper to cool.

Chicken/Spinach Baked Meatballs Recipe

Β (I roasted my potatoes, beets, carrots in avocado oil and three a packet of organic ranch seasoning on top on 425 degree oven for 20 mins)

  • 2 tablespoons olive oil
  • 1 large onion (finely chopped)
  • 2 cloves garlic (finely minced)
  • 1 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon dried thyme leaves
  • 1/2 teaspoon dried oregano
  • 1/4 – 1/2 teaspoon crushed red pepper flakes (optional – adjust to your preference)
  • 1 bunch FRESH chopped spinach
  • 2 tablespoons balsamic vinegar
  • 1/3 cup chicken or veggie broth
  • 2 lbs ground chicken
  • 1- 1.5 cup bread crumbs
  • 2 large eggs
  1. Preheat oven to 400 degrees F. Prepare a large baking sheet by spraying with cooking spray.
  2. In a frying pan on medium heat, heat olive oil until hot. Then add onion, garlic, salt, pepper, thyme, oregano, and red pepper flakes. SautΓ© until onion is tender (about 5-6 minutes total time).
  3. Add spinach to pan and combine with onion mixture. Add balsamic vinegar and broth and mix well to combine. Cook until most of the liquid has cooked out (evaporated). I don’t have much liquid in my pan after I combine all these, but it will depend on how well you drained your spinach. Remove from heat and allow to cool to room temperature.
  4. In a large bowl, combine the chicken, bread crumbs, and egg. Add cooled onion/spinach mixture to the meat. I do all of this step with my hands, but you can use a spoon if you prefer.
  5. With your hands, create meatballs that are about 1 – 1 1/2 inches in diameter and place them on the baking sheet. Leave a little bit of space between each meatball. When you are done shaping your meatballs, you will probably have about 40-42 meatballs from this recipe. Don’t need that many? Freeze them after baking or cut this recipe in half (but I say freeze them and then you’ve done the work only once and have a future meal).
  6. Bake until your meatballs are cooked through with an internal temperature of 160 degrees F – which was about 20 minutes for my oven. Remove from oven and serve as desired.

Ingredients:

1 stick butter

1 cup flour

1 cup sugar

3/4 cup milk

1 1/2 tsp baking powder

5-10 pieces fresh fruit

1/2 cup sugar

Instructions:

PREHEAT oven to 350 degrees. MELT 1 stick of butter in square 8X8 glass dish. MIX 1 cup flour, 1 cup sugar, 3/4 cup milk, 1 1/2 tsp baking powder. POUR over butter. CUT fresh fruit into half moon shapes and add to some water on the stove with 1/2 cup sugar- bring to a boil. ADD the cooked fruit on top. BAKE at 350 degrees until brown (usually 35 mins or so).
