These Cauliflower Taco Bowls with Creamy Vegan Cilantro Ranch are filled with quinoa, bell peppers, onion & beans. A healthy & tasty vegan dinner!

  • 1 tablespoon olive oil
  • 2 cups cauliflower roughly chopped
  • ½ red bell pepper chopped
  • ½ red onion chopped
  • 2 tablespoon taco seasoning

FOR THE QUINOA (or rice)

  • 1 tablespoon olive oil
  • ½ red bell pepper chopped
  • ½ red onion chopped
  • 1 jalapeño chopped
  • 2 cups QUINOA (or brown rice) cooked
  • 1 15-ounce can black beans drained and rinsed
  • 1 4-ounce can green chilis
  • 2 tablespoon taco seasoning
  • ¼ cup salsa*


  • ½ cup vegan mayo
  • 1 tablespoon apple cider vinegar plus more to taste
  • ½ bunch cilantro
  • 4 cloves garlic peeled
  • 5 basil leaves
  • salt & pepper to taste
  • water as needed


  • 5 cups leafy greens
  • 1 avocado chopped
  • cilantro, lime wedges for topping



  • Preheat the oven to 425 degrees and line a baking sheet with parchment paper. 
  • Add all of the cauliflower ingredients to the baking sheet and toss to coat evenly. Bake in the oven for 30 minutes, tossing halfway.
  • While the cauliflower is cooking, prepare the quinoa/rice mixture.
  • Heat olive oil in a pan over medium heat. Add bell pepper, onion and jalapeño to the pan and sauté for 5 minutes. Add the remaining rice ingredients and toss to combine. Turn heat to low and stir occasionally until you are ready to eat.
  • To prepare the cilantro ranch add all of the ingredients (except the water) to a food processor. Taste and adjust salt, pepper and vinegar to taste. Thin with water until desired consistency is reached. 
  • To assemble, layer greens, rice mixture and cauliflower in each bowl.** Top with avocado and cilantro. Drizzle with cilantro ranch and serve with lime wedges!

Cajun Roasted Romanesco Cauliflower


  • 1 large Romanesco Cauliflower (you can use a regular Cauliflower if that’s easier)
  • 2 Tbsp Cajun or Fajita spice
  • 1 Tablespoon of olive oil
  • 1 cup of Greek yogurt
  • 1 Lime, zest and juice
  • 1/2 tsp Ground Coriander
  • 2 Avocado
  • Chilli Flakes and green Onion optional
  • Parmesan cheese optional
  • Cilantro for the top, optional



  1. Pre heat oven to 200°c. Mix the spices with the olive oil and mix in cauliflower to coat.
  2. Place in a sheet pan and throw it in the oven for approximately 30 minutes.
  3. While the Romanesco is cooking. Place your yogurt in a bowl, zest your Lime, mix in ground Coriander and mix altogether.
  4. With the Lime you just zested, squeeze the juice from it into a bowl, scrape your Avocado into it and Mash together.
  5. When the Romanesco is cooked, place a small knife into it, if it is still very hard leave for another 5 minutes, but if it feels soft and the knife passes into it easily then remove from oven.
  6. Either leave whole or cut into wedges, drizzle your yogurt over the top and served with your smashed Avocado. Top w cheese and onions if desired. Enjoy and share with others……may be.

Mashed Cauliflower & Potatoes (vegan option)

Only 1/2 the carbs in this delicious recipe!! Bonus- my kids can’t tell cauliflower is even there. Shhh 😏🤫


Serves: 5


1 head cauliflower

1 bag yellow potatoes

1 stick regular or vegan butter

1/2 cup milk or for vegan - pea milk

1 tsp salt

1/2 tsp garlic powder

1/4 tsp pepper


Peel and dice potatoes and cut up cauliflower. Place large stock pot on stove with hot water. Add all the potatoes and cauliflower to pot add 1/2 tsp salt and boil until they are soft. Once soft, drain and move to stand mixer bowl. Use whisk attachment and add all other ingredients scraping down sides. Enjoy!

2 Tbsp Olive oil

1 head cauliflower, roughly chopped

🧅 1 onion, diced

🧄 2 cloves garlic, chopped

1 (32 Oz) chicken stock

1 cup heavy cream

🧂Salt & pepper, to taste

🥓 6 slices cooked bacon, chopped

🧀 shredded cheese for topping

Green onions, for topping


Heat olive oil in stockpot. Add garlic, onions, & cauliflower til onions are translucent. Add stock, heavy cream, salt, pepper, & chopped cooked bacon. Heat to boiling then serve in bowls with shredded cheese and green onions.

Jalapeño Popper Cauliflower Casserole (Keto)

  • For the puree:
  • 1 head of cauliflower
  • 2 Tbsp heavy cream
  • 1 Tbsp butter
  • 1/4 cup sharp cheddar cheese, shredded
  • 1 Tbsp raw jalapenos, chopped
  • 1/4 tsp garlic powder
  • salt and pepper to taste

For the cream cheese layer:

  • 6 oz cream cheese, softened
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup salsa verde


For the topping:

  • 3/4 cup colby jack cheese, shredded
  • 1/4 cup raw jalapenos, sliced (seeds removed)



  1. For the puree:
  2. Clean and trim the cauliflower, breaking it into medium sized pieces. Place in a microwave safe bowl with 2 Tbsp of cream and 1 Tbsp of butter. Microwave, uncovered, on high for 10 minutes. Stir to coat cauliflower with cream/butter mixture. Microwave for another six – eight minutes on high (or until cauliflower is tender). Remove from the microwave and put into a high speed blender or food processor along with the cheese, jalapenos, and garlic powder. Puree until smooth (or you can leave it chunky if you prefer. Season generously with salt and pepper to taste.

For the cream cheese layer:

  1. Put the cream cheese in a microwave safe bowl and nuke for 30 seconds to soften. Add the shredded cheese and salsa verde, mixing thoroughly. It should be very spreadable – if not, nuke for a few more seconds.

To assemble the casserole:

  1. In a medium-sized oven proof dish (approximately 8 x 8), spread out a thick layer of cauliflower puree. Spread the warm cream cheese mixture on top of the puree. Top with a layer of shredded colby jack cheese, and sliced jalapenos. Bake at 375 degrees for about 20 minutes, or until the cheese is completely melted. You can finish it under the broiler for a couple of minutes to brown further if you’d like. Alternatively, microwave on high for about 6 – 8 minutes, or until the cheese is melted and the casserole is heated through. Serve hot.
  2. Optional – top with cooked, crumbled bacon before serving.

Golden Beet Cauliflower Soup


  • 1 tablespoon avocado oil
  • ½ onion, (diced)
  • 3 stalks celery, (chopped)
  • 2 clove garlic
  • 3 carrots, peeled and diced
  • 4 cups vegetable or chicken stock + 2 cups water
  • 3 golden beets, (peeled and chopped)
  • 1 head cauliflower, (chopped)
  • 1 inch knob of fresh turmeric, (grated OR 1 teaspoon dry)
  • 1 teaspoon salt
  • Fresh cracked pepper
  • Optional toppings: cheese, pumpkin seeds, green onion, cilantro



  1. In a large soup pot, heat the oil over medium heat. Add in the onion,carrots, celery. Sauté until softened and translucent, about 7-10 minutes. Add in the garlic and sauté another 30 seconds.
  2. Add in all the remaining ingredients and bring to a simmer. Cover and simmer for 20 minutes or until all the vegetables are tender.
  3. Transfer to a blender and blend until smooth. Adjust seasoning if needed and serve.

1 head Cauliflower, chopped

carrot, diced into small sticks

bell pepper, cut into strips (any color)

cucumber, cut into strips

cabbage, thinly sliced (any color)

cilantro, 1/2 cup

6 Tbsp white vinegar

2 Tbsp olive oil

2 cloves garlic, chopped

onion, shopped optional

capers, optional

salt & pepper, to taste


You can partially boil the carrots and cauliflower or leave them raw. I left mine raw.  Add all the ingredients in a large bowl mix and enjoy!
