Italian Napa Cabbage Slaw


1 28-oz. Napa cabbage, tough outer leaves removed, halved, sliced thinly

3/4 tsp. flaky sea salt

½ cup coarsely chopped raw pistachios

1/4 cup extra-virgin olive oil

½ tsp. freshly ground black pepper, plus more

1/2 tsp thyme

Orange Zest, finely grated

1 orange, juiced

2 Tbsp. apple cider vinegar

2 tsp. honey, preferably wildflower

1 cup parsley leaves with tender stems

1 Tbsp. thinly sliced chives

3 oz. Parmesan, shaved, plus more for serving

Shredded carrots, optional

Shredded cucumber, optional


  1. Place sliced Napa cabbage, parsley, pistachios, and any other optional veggies in bowl.
  2. Make dressing ingredients in measuring cup: olive oil, apple cider vinegar, salt, pepper, thyme, orange zest, orange juice, & honey.
  3. Mix dressing into cabbage and enjoy!
