Eggs with Greens Breakfast

Ingredients:

eggs

Olive oil

greens of your choice (I used pea sprouts and spinach mix)

salsa, for topping (optional)

fresh organic fruit (optional)

 

Instructions:

Place your olive oil 1/2 tsp or so in a pan on stove and heat up over medium heat. Add 1 cup or so of greens and cook a few minutes. Remove the greens to a plate and then cook your egg. Top the greens with the cooked egg and then top with salsa and serve with fruit if desired.
